DOC Primitivo di Manduria

History |
The name Primitivo derives from the early maturing of the grape. Its origins are uncertain but are possibly native to the Dalmatians and imported to Puglia by the Illyrians more than 2,000 years ago. Adding to the credibility of this hypothesis some authors claim Primitivo can be identified with the Croatian vine Plavac Mali and more so to the Zinfandel originating from Hungary and subsequently exported to California and Australia. Recent DNA analysis confirms this hypothesis. (Vines of Italy, Scienza, Calò, Costacurta). |

Vinification |
Maceration for about 7 days, fermentation partially carried out using autochthonous yeast starter, completed in French oak, refined in French wooden casks. |
Ageing |
14 months in French oak barriques. |

Game, grilled meats and blue cheeses. |
